Can someone please fill me in - what on earth is "vegan sugar".
How is sugar not vegan? And if it isn't vegan, what then makes "vegan sugar" vegan? Also, is it then really still sugar?

Cake is, I think, rescued. We shall see. I have ingredients to make ganache this evening as per
eneit's suggestion. (There will probably be inclusion of Frangelico, to keep the theme going.)
It is pared back and sealed in layers of plastic wrap. Once I pared back the burnt bits, it looked sort of ok. However, I haven't actually tried it yet. Never mind, at least it's a sight closer to how the cake is supposed to be than my usual efforts. I will try less cooking time next time, at the same temperature ... then stand. Then compare. =D
