Thai Green Chicken Curry

3-6 chillies (to taste)
1 small onion
1 bunch washed and drained coriander
2 tsp chopped or minced garlic
1 tsp chopped lemongrass
1 tsp chopped or minced galangal
1 tsp dried shrimp paste
1 tsp salt
1/2 tsp kaffir lime rind (or sometimes a little juice as well)
1/4 tsp peppercorns
1 tablespoon peanut oil

250ml coconut milk (usually equivalent to one can, but have a second can on hand if you like more sauce)
1 tablespoon fish sauce
1 tablespoon palm sugar
20 thai sweet basil leaves
3 kaffir lime leaves

1 tablespoon peanut oil
500 - 700g diced chicken

Blend chillies through to peppercorns. Set aside. Heat wok or deep saucepan and add remaining oil. Add blended mix and fry until oil comes through to the surface of the paste. Add diced chicken and fry until cooked. Add coconut milk through to palm sugar and stir. Set to simmer, add kaffir lime leaves. Simmer until sauce is slightly thickened and reduced. Add basil leaves just prior to serving.

Serve with rice.

My mommy makes curry ALL THE time haha. Heck, I'm Indian!

The "serve with rice" part had me laughing hehe.

I imagine! And, I am soooo envious. My dad makes a lot of Malay style curries but I don't get to eat them as often having moved out of home =(

Well, lol, I was just copying it out of the recipe book! =P Although there are some additions that are my own. Actually, lmao, my aunt served the same sort of curry last Friday, but with potatoes cooked into the curry instead of rice ... which works. But that also makes the "serve with rice" not invalid lolol! =D

that sounds so yumm.... but the problem with recipes like this is though, that it usually involves me getting lost in Asian supermarkets and the central market trying to find all the exotic ingredients!! I am a bit of a newb and don't even know what galangal looks like :X lol I will try it though, it sounds too good!!

You can get most of this stuff from Coles or Woolworths. Galangal is related to ginger sort of. You should be able to get it in a Chinese supermarket, just write the name down and take it in and ask them if they have it.

This is ridiculously yummy. You have to try it.
